Traditional Balsamic Vinegar of Modena PDO consists of cooked must of Trebbiano and Lambrusco grapes, aged according to tradition in wooden barrels for at least 12 years, with annual transfers in different barrels in order to acquire the aromas of the different woods (oak, chestnut, cherry, oak, ash, mulberry, juniper). Each barrel is open to allow the fermentation process and concentration by natural evaporation.

Traditional Balsamic Vinegar of Modena PDO is indicated on cheeses, grilled or boiled vegetables, meat, omelettes, risotto, pizza, ice cream and desserts and as a digestive at the end of a meal.
